Orzo with caramelized
mushrooms, thyme and SELECT
balsamic cream with blue

Ingredients

150 g Orzo pasta, medium
150 g white mushrooms, sliced
100 g pleurotus mushrooms, sliced
500 ml vegetable stock, hot
100 ml SELECT balsamic cream with blue cheese
1 onion, chopped
1 clove garlic, chopped
1 tbsp thyme, crushed leaves only
1 tbsp butter
80-100 g gruyere, grated
Olive oil
Salt
Pepper

Instructions

1.Place a pan over medium heat and add the olive oil, the onion and sauté for 1 – 2 minutes.

2.Add the garlic, the mushrooms, cook for another 2 minutes and add the orzo along with the thyme.

3.Stir constantly with a wooden ladle so that the orzo does not stick to the bottom of the pan.

4.Deglaze with the SELECT balsamic cream with blue cheese.

5.Pour in the vegetable broth, in batches with a ladle. Wait for the first batch to be absorbed before pouring in the next. Repeat the process until all the broth is used up.

6.Repeat the process until all the broth is used up.

7.Remove the pan from the heat once the orzo is ready.

8.Add the butter, the gruyere, the salt, the pepper and mix with a wooden ladle.

9.Serve the orzo hot.
