Waffle with SELECT lemon cream
and Aegina pistachio

Ingredients
For the waffles
2 eggs
6 tbsp. granulated sugar
4 tsp. baking powder
480 ml milk, whole
300 g flour, self-raising
¼ tsp. baking soda
2 tsp. salt
6 tbsp. sunflower oil
For the lemon cream
1/2 cup granulated sugar
1 tbsp corn starch
1 tbsp flour
a pinch of salt
1/2 cup coconut milk
1 egg yolk, lightly beaten
1 tbsp butter, unsalted
150 g SELECT lemon cream
100 g cream cheese
For the garnish
Aegina pistachios
Instructions
For the waffles
1.Put the flour, the baking powder, the granulated sugar, and the baking soda in a bowl and mix.
2.Add the sunflower oil, the milk, and the egg yolks one by one into the mixture.
3.In another bowl, beat the egg whites until they are fluffy. But not until they become a meringue.
4.Finally, put the egg white mixture in the bowl with the mixture we have made with the flour and yolks and mix.
5.Bake the mixture in the waffle iron and after preparing them, set them aside.
For the lemon cream
1.In a small pan, mix the granulated sugar, the corn starch, the salt and the coconut milk. Put on medium heat and bring to a boil. Stir constantly for 2 minutes.
2.Add 1 tablespoon of the hot mixture to the egg yolks.
3.Stir and put the egg yolk mixture in the pan with the coconut milk.
4.Cook for another 2 minutes until we have a thin and velvety cream.
5.Remove from the heat and add the butter and the SELECT lemon cream.
6.Stir and let cool.



To assemble
Spread the lemon cream over the waffle, sprinkle with Aegina pistachios and serve.
