Salmon with grilled vegetables
and SELECT balsamic cream with carob

Ingredients

For the Salmon
3 salmon fillets
1 lemon, its juice
A little olive oil
Oregano

For the vegetables
1 clove of garlic, cut in half
2 zucchini, sliced
1 medium eggplant, sliced
1 red sweet pepper, sliced
1 green sweet pepper, sliced
2 carrots, sliced
1/2 kilo baby potatoes, sliced
1 onion, chopped
2 bay leaves
1 tsp. cumin
2 tsp. thyme
4 tbsp. olive oil
Salt
Pepper
200g SELECT balsamic cream with carob and extra for serving (optional)

Instructions

1.Preheat the oven to 180°C,set to fan.

2.Rub a large baking tray with the garlic.

3.Place the eggplant, the zucchini, the carrots, the potatoes and the onion in the baking pan.

4.Add the bay leaf, the cumin, the thyme, the salt, the pepper, the olive oil and mix well.

5.Bake for 30 minutes, then add the peppers, mix well and leave for another 15 minutes.

6.Pour the SELECT balsamic cream with carob over the vegetables. Mix and continue baking for 15 minutes.

7.Place parchment paper on a small baking pan, add the salmon fillets, sprinkle with olive oil, add the lemon juice, the oregano and place the salmon in the oven until golden brown.

8.The baking time depends on the size of the fillets and the oven. Approximately 10 minutes.

9.Finally, remove the salmon with the vegetables from the oven, place on a plate and serve

To assemble

Remove the salmon with the vegetables from the oven, place it on a plate, drizzle with a few extra drops of SELECT carob balsamic cream, and serve.
