Velvety soup
with lentils and SELECT
balsamic vinegar

Ingredients

1 onion, chopped
1 clove garlic, chopped
1 tbsp. olive oil
3 tomatoes, chopped
2 cans, chopped tomatoes, 250 g each
1 1/2 tsp SELECT balsamic vinegar and extra for serving (optional)
1 vegetable stock cube
2 glasses water
225 g red lentils
Salt
Pepper

Instructions

1.Heat the olive oil in a pan over medium heat.

2.Add the onion and sauté for 5 minutes until softened..

3.Add the garlic and sauté for 1 minute.

4.Add the chopped tomatoes, SELECT balsamic vinegar, vegetable stock and stir. Cook for 5 minutes.

5.Add the canned tomatoes, water, salt, pepper and the lentils (which have been rinsed) and leave until they come to a boil.

6.Reduce the heat and wait for about 30 minutes. Stir occasionally.

7.Remove the pan from the heat and beat with an immersion blender until you get a smooth and velvety texture.

To assemble

Once ready, place in a deep plate, drizzle with a few drops of SELECT balsamic vinegar and serve
