1.Heat the olive oil in a pan over medium heat.
2.Add the onion and sauté for 5 minutes until softened..
3.Add the garlic and sauté for 1 minute.
4.Add the chopped tomatoes, SELECT balsamic vinegar, vegetable stock and stir. Cook for 5 minutes.
5.Add the canned tomatoes, water, salt, pepper and the lentils (which have been rinsed) and leave until they come to a boil.
6.Reduce the heat and wait for about 30 minutes. Stir occasionally.
7.Remove the pan from the heat and beat with an immersion blender until you get a smooth and velvety texture.
